[Biological effects of resveratrol and other constituents of wine]

Abstract:

In recent years many scientific papers have been published concerning the positive effects of wine and its active principles, the polyphenol resveratrol being the most widely discussed compound. The results of epidemiological and experimental studies in man, animals, and in vitro have shown that polyphenols contained in wine, tea, fruit, and vegetables exert a positive effect on both the progression and regression of atherosclerosis, possess an anticancerogenic action, and due to their antioxidative effects they act against other processes connected with the reactive forms of oxygen production and lipid peroxydation in the blood plasma and membranes. Experimental findings have shown that resveratrol protects the cardiovascular system, affects lipid metabolism, and inhibits low-density lipoproteins (LDL) oxidation and blood platelet aggregation. In addition, this natural product is able to inhibit the growth of some tumours and possesses antiinflammatory properties and a number of other biological effects. This report aims to describe and characterize in a summary the biological properties of the principal active principles of wine–flavonoids and polyphenols, with a detailed focus on resveratrol, which has been described as the most interesting agent.

En los últimos años numerosos trabajos científicos se han publicado sobre los efectos positivos del vino y sus principios activos, el resveratrol, el compuesto polifenolico sobre el que más se ha debatido. Los resultados de estudios epidemiológicos y experimentales en el hombre, los animales e in vitro han demostrado que los polifenoles contenidos en el vino, té, frutas y verduras ejercen un efecto positivo tanto en la progresión y regresión de la aterosclerosis, poseen una acción anticancerogenica, y debido a sus efectos antioxidantes que actúan contra otros procesos relacionados con las formas reactivas del oxígeno y la producción de peroxidación de lípidos en el plasma sanguíneo y las membranas. Los datos experimentales obtenidos han demostrado que el resveratrol protege el sistema cardiovascular, afectan el metabolismo de lípidos, e inhibe las lipoproteínas de baja densidad (LDL), la oxidación y la agregación de plaquetas en la sangre. Además, este producto natural es capaz de inhibir el crecimiento de algunos tumores y posee propiedades antiinflamatorias y una serie de otros efectos biológicos. Este informe tiene como objetivo describir y caracterizar en un resumen las propiedades biológicas de los principios activos principales del vino.- flavonoides y los polifenoles, con un enfoque detallado sobre el resveratrol, que ha sido descrito como el agente más interesante.
